I appreciate your efforts to work with our department to protect the public's health. During my inspection yesterday I noticed that your food truck serves hamburgers and eggs cooked to order (undercooked). While this is allowable under the CT Public Health Code, you must provide a reminder statement that states the following: "Thoroughly cooking meats, poultry, seafood, shellfish,or eggs reduces the risk of foodborne illness." Please make a sign and post this where your customers can see this. It must be viewable at all times during the operation of your food truck. You can paint it on your truck, make a sign out of 8 X 10 paper and laminate it,etc. The sign must be made by your next inspection in June, since this is a four point violation of the public health code(CT PHC section 19-13-1342 (m)(1)(F). Should you have any further questions, please do not hesitate to contact me.
