It came to my attention during the inspection that you serve undercooked raw shell eggs to some of the residents in your facility Upon further investigation it was also determined that some of your residents who fall into the category of"highly susceptible populations"under the Connecticut General Statutes section 19a-409 are ordering potentially hazardous food items undercooked, particularly the"Eggs cooked your way"and the"LCB Hamburgers". i The requirements in CT Public Health Code 19-13-B42(m)(1)(F)states: "....Exemptions to the food temperature requirements shall not be allowed at food service establishments serving highly susceptible populations such as immune compromised . individuals or older adults in hospitals, nursing homes, or similar health care facilities as listed in CGS section 19a-490." The central kitchen in your establishment is not exempt from having to thoroughly cook foods to the required temperatures and if a resident chooses to order undercooked eggs, you must use pasteurized eggs. All other menu items shall be cooked thoroughly. I've attached definitions in CGS section 19a-490, since they are referred to in 19-13-B42(m)(1)(F). If,however, there is a way that your facility could separate the undercooked food items that are prepared for those individuals who are not in the highly susceptible category, it would be acceptable to continue with the exemption noted in the regulations,as long as there is a reminder and disclosure statement on your menu. Thank you for your continued cooperation in this manner.
