Please be assured that your staff is maintaining a high quality level of service and sanitation, as was observed during my inspection performed this morning. They received a point grade of 99 with no critical violations. Our system is being switched over to a computer based, paperless inspection report so I am hoping to send you the copy of my findings as soon as I am able. I would like to express a concern I discovered during my inspection. One of the milk coolers(holding milk only, no overflow)was temping at 50 degrees ambient on the right side of the unit, while the left side of the unit was temping at 41 degrees. The milk was temping at 49 and 48 degrees(at the top, the warmest part of the unit), and they hadjust finished breakfast service, so this would be normal. I am concerned because I performed my inspection around 9:30 and took a temperature at 10 minute intervals with no change on the right side of the unit. There were two thermometers in the unit that were reading the same as my findings. The milk re-temped 30 minutes later on the right side to 41degrees, and the middle milk temped at 46deg. No milk was held/stored on the right side of the unit. Louise and Gina, who were on site at the time of my inspection, stated that they had been scraping ice off of the left side of the unit and not off of the right side of the unit for a small period of time and they try to monitor the unit to be sure it stays closed as much as possible. I am requesting that the unit be repaired or replaced in order to assure that the milk stored inside does not become contaminated due to spoilage. Please submit a work order or receipt of repair to this email address by January 31, 2017. 1 thank you for your attention to this matter.
