Dear Mr. Deptula:
I met with Highland Park Market officials on 8 .Tune 2005, concerning your questions. It was
decided that the hand sink you inquired about in the bakery would be moved to a more
central location, to service both the cake and bread slicing areas. Please let me know if this is
adequate.
Also, sinks other than hand sinks and pot/pan sinks will have air gap drains and hand sinks
will have appropriate splash guards.
