Approval to connect grease interceptor
To Whom It May Concern:
:The South Windsor Water Pollution Control Authority, at its regular meeting of June 7, 2005,
gave approval of the application as presented for connection of a grease interceptor to the
Town's sewerage system-of a commercial building located at the Shops at Evergreen Walk,
South Windsor,CT. as more specifically shown on plans entitled "Moe's Southwest Grill,Suite
535, 501 Evergreen Way, South Windsor, CT 06077", Prepared by MWT, Lawrence, GA,
Project No. 04-266, Sheet No. P1, Dated 1118/04; and subject to the following conditions:
1.• Permit must be obtained from the State of Connecticut Department of Environmental Protection.
2. , Technical approval of the Town Engineering Department.
3. Final Authority approval and acceptance of the sanitary sewerage connection will be given once
the sewer line has been installed:and inspected by the Town staff,.and based upon the written
verification of.the Town staff that. said sanitary sewer line was installed in substantial
conformance with the design plans approved by the Authority, and meeting all Town regulations
and appropriate technical specifications relating to sanitary sewer construction.
This approval letter must be superimposed on the final approval plans.

This fax is in regard to the question concerning the grease interceptor sizing for the referenced
project. The following calculation is based on the guidelines in the ASPE Data Book, Volume 2,
Chapter 8,Table 8-9 Quantities of Sewage Flows, According to these guidelines, its estimated that
3 GPD/person (per meal served) is the value used for a restaurant establishment similar to this
project. The referenced project has approximately 72 seats and turns over an average of 4 times
per day,with this information the following is our calculation for the kitchen waste gallons per day
usage:
72 seats x 3 GPD/person x 4 turnovers per day=864 GPD flow through our specified 1000 gallon
grease interceptor,
