The following are my calculations. Per the_American Society of Plumbing.Engineers Data Book,Chapter 2S, Table 25-6 (Typical wastewater flows from commercial Sources), the wastewater flow for Restaurant ranges from 2.1 -4.0 gpd/meal with the average being 2.6 gpd/meal, Based on 350 meals/day, I offer the following; Average 2.6 gpd/meal x 350 meals/day= 10 gallons /day Maximum 4 gpd/meal x 350 meals/day= 1,400 gallons/da Based on the above calculations, I would recommend a minimum 1,500-gallon grease tank be installed for the project.
